Phulka (Made with Quinoa and Chia Seeds Flour)

Phulka is a traditional Indian flatbread, typically made with wheat flour, but here we’re giving it a healthy twist using quinoa and chia seeds flour.

Take 2 bowls of quinoa and chia seeds flour in a mixing bowl.
Add half a teaspoon of salt to enhance the flavor.
Slowly pour in 2 bowls of water while kneading the dough with your hands.
Knead until the dough becomes soft and pliable—not too sticky, not too hard.
Let the dough rest for 15–20 minutes. This helps to hydrate the flour properly and makes rolling easier.
After resting, divide the dough into equal-sized balls.
Dust your rolling surface with a little dry flour and roll each ball into a thin, round disc.
Heat a tawa or flat pan on medium heat.
Place one rolled disc on the hot tawa and cook until bubbles start to form.
Flip it and cook the other side until golden brown spots appear.
For a perfect phulka, place it directly on the flame using tongs for a few seconds until it puffs up.
Remove from heat and optionally brush with ghee for added flavor and softness.

Phulkas are light, oil-free, and perfect for any meal of the day.
Serve them hot with your favorite curries, dals, or even yogurt and pickle.
